Order Beef: What to expect from a standard online butcher

Looking to order beef online? My Butcher specializes in both USDA prime beef and premium Black Angus. All beef is shipped fresh and never frozen. In addition meat is not pre-cut but is portioned to specification when customers place an order.

Cut to order beef is available in all the classic cuts: filet mignon, strip steaks and rib-eye, and bone-in cuts like t-bones and porterhouse. Meat is offered in individual cuts as well as pre-defined assortment boxes, and build your own boxes. Prices in the pre-defined assortment boxes average from $16 to $48 per pound.

USDA prime beef has a certain level of fat content and marbling as determined by the USDA. Roughly 1% of all beef produced earns the right to be designated as prime beef.

Both Black Angus and prime grade is wet aged for at least 21 days to increase tenderness. Wet aging involves letting the meat rest in its vacuumed sealed packages to allow natural enzymes to break down the tough fibres in the meat.
